Preheat the oven to 425°F
Pat the Cornish hens dry
Season inside and out with salt, pepper, and any desired herbs or spices
Rub the skin with oil or melted butter
Place the hens breast-side up in a roasting pan or on a baking sheet
Roast for 45 to 60 minutes, until the skin is golden and the internal temperature reaches 165°F in the thickest part of the thigh
Baste once or twice during cooking if desired
Let the hens rest for 10 minutes before serving
Carve and serve
