Rinse the dried chickpeas and remove any stones or debris
Soak the chickpeas in plenty of water for 8 to 12 hours
Drain and rinse the soaked chickpeas
Place the chickpeas in a pot and cover with fresh water by 2 to 3 inches
Bring to a boil over high heat
Reduce to a simmer and skim off any foam
Cook until tender, about 1 to 2 hours
Add salt near the end of cooking
Drain the chickpeas and use as needed
