Chop or tear the greens into bite-sized pieces
Heat oil or butter in a pan
Add garlic, onion, or seasonings if desired
Add the greens to the pan in batches
Stir until they begin to wilt
Add a small amount of water, broth, or stock
Cover and cook until tender
Stir occasionally to prevent sticking
Season with salt and pepper
Add vinegar, lemon juice, or chili flakes if desired
Serve hot
