Rinse the neck bones under cold water
Pat them dry with paper towels
Season with salt, black pepper, garlic powder, onion powder, and any desired spices
Heat a large pot or deep skillet over medium-high heat
Add a little oil to the pot
Brown the neck bones on all sides
Remove excess grease if needed
Add chopped onion, garlic, and optional celery or bell pepper
Pour in enough water or broth to cover the neck bones
Add bay leaves or other seasonings if desired
Bring the liquid to a boil
Reduce the heat to low
Cover the pot with a lid
Simmer for 1.5 to 2.5 hours
Stir occasionally and add more liquid if needed
Cook until the meat is tender and falling off the bone
Taste and adjust seasoning
Serve hot with your preferred sides
