Scrub the oyster shells under cold running water
Discard any oysters with cracked shells or shells that stay open when tapped
Shuck the oysters if needed, or cook them in the shell
Preheat the oven to 450°F
Arrange oysters on a baking sheet with the cupped side down
Bake for 8 to 12 minutes until the shells open
Remove and discard any oysters that do not open
Melt butter with garlic, lemon juice, and herbs if desired
Spoon the butter mixture over the oysters
Serve immediately
Heat a grill to medium-high
Place oysters on the grill with the flat side up
Close the lid and grill for 5 to 8 minutes until the shells open
Remove and discard any oysters that do not open
Add butter, sauce, or toppings after grilling
Serve immediately
Heat oil in a skillet over medium-high heat
Dredge shucked oysters in seasoned flour or cornmeal if desired
Fry oysters in batches for 2 to 3 minutes until golden brown
Drain on paper towels
Serve hot
Bring water to a boil in a pot with a steamer basket
Place oysters in the basket
Cover and steam for 5 to 10 minutes until the shells open
Remove and discard any oysters that do not open
Serve with melted butter or sauce
