Rinse the patty pan squash and trim the stem and blossom ends
Cut into halves, quarters, or slices if desired
Toss with olive oil, salt, and pepper
Roast at 400°F for 20 to 25 minutes until tender
Or sauté in a skillet over medium heat for 8 to 10 minutes until lightly browned and tender
Or steam for 5 to 7 minutes until just tender
Or grill over medium heat for 3 to 5 minutes per side
Season with garlic, herbs, butter, lemon, or Parmesan if desired
Serve hot as a side dish or add to salads, pasta, or grain bowls
