Rinse 1 cup pearl couscous if desired
Heat 1 tablespoon olive oil or butter in a saucepan over medium heat
Add 1 cup pearl couscous and toast for 1 to 2 minutes, stirring often
Add 1 1/4 to 1 1/2 cups water or broth and a pinch of salt
Bring to a boil
Reduce heat to low, cover, and simmer for 8 to 10 minutes
Remove from heat and let stand covered for 5 minutes
Fluff with a fork
Add more salt, pepper, herbs, or butter if desired
