Preheat the oven to 300°F to 325°F
Remove the membrane from the back of the ribs
Pat the ribs dry with paper towels
Trim any excess fat if needed
Season both sides with salt, pepper, and your preferred dry rub
Line a baking sheet or roasting pan with foil
Place the ribs on the pan meat-side up
Cover the ribs tightly with foil
Bake for 2.5 to 3.5 hours, depending on thickness
Remove the foil during the last 20 to 30 minutes if you want a firmer exterior
Brush with barbecue sauce if desired
Increase the oven temperature to 400°F for the final sauce step if needed
Bake uncovered until the sauce is sticky and caramelized
Check that the meat is tender and pulls back from the bones
Let the ribs rest for 10 to 15 minutes before serving
Slice between the bones and serve
