Trim roots and remove any damaged outer layers
Wash thoroughly to remove dirt from leaves and bulbs
Pat dry
Separate bulbs from leaves if desired
Sauté bulbs in butter or oil over medium heat until tender
Add leaves near the end and cook just until wilted
Roast whole ramps with oil, salt, and pepper at 400°F until tender
Grill ramps briefly until lightly charred and softened
Pickle cleaned ramps in a vinegar brine
Add chopped ramps to eggs, pasta, potatoes, soups, or risotto
Use ramps raw in salads or as a garnish if tender
Season lightly with salt and pepper before serving
