Preheat the oven to 375°F
Cut the tops off the peppers and remove the seeds and membranes
Lightly oil a baking dish
Cook rice or another grain if needed
Brown ground meat or use a meatless filling
Add onion, garlic, and seasonings to the filling
Stir in cooked rice, beans, cheese, or vegetables as desired
Mix in tomato sauce or diced tomatoes
Spoon the filling into the peppers
Place the stuffed peppers upright in the baking dish
Add a little water or sauce to the bottom of the dish
Cover with foil
Bake for 30 to 40 minutes
Remove the foil
Top with cheese if desired
Bake uncovered for 10 to 15 minutes more
Check that the peppers are tender and the filling is hot
Let rest for a few minutes before serving
