Choose ripe but firm peaches
Wash the peaches thoroughly
Peel the peaches if desired
Slice the peaches and remove the pits
Treat slices with lemon juice or ascorbic acid to prevent browning
Arrange the peach slices in a single layer on a baking sheet
Freeze the slices until firm
Transfer the frozen slices to freezer-safe bags or containers
Remove as much air as possible before sealing
Label the containers with the date
Store in the freezer for up to 12 months
