Heat a skillet over medium to medium-high heat
Add oil or butter to coat the skillet
Add the potatoes in a single layer
Season with salt and any desired spices
Cook without stirring for a few minutes until browned on one side
Flip or stir the potatoes and continue cooking
Reduce heat if needed to prevent burning
Cook until the potatoes are tender and golden brown
Remove from the skillet and drain on paper towels if desired
