Wash the brinjal
Trim the stem
Slice the brinjal into rounds or long pieces
Sprinkle salt on the slices
Let them rest for 10 minutes
Pat the slices dry
Heat oil in a pan
Add the brinjal slices to the hot oil
Fry on medium heat
Flip the slices when one side turns golden
Cook until both sides are crisp and browned
Remove from the pan
Drain excess oil on paper towels
Serve hot
