Choose a heavy skillet, grill pan, or cast-iron pan
Place the pan on the stove over medium-low heat
Add a small amount of oil if the sausages are lean or the pan is not nonstick
Prick the sausages lightly only if needed to prevent bursting
Place the sausages in the pan in a single layer
Cook slowly, turning every few minutes
Brown all sides evenly
Lower the heat if the sausages are browning too fast
Cover the pan briefly if needed to help cook the inside through
Continue cooking until the sausages reach an internal temperature of 160°F for pork or beef, or 165°F for poultry
Remove the sausages from the pan
Let them rest for a few minutes before serving
