Check the seed packet for the expected days to maturity
Look for the shoulder of the carrot to peek above the soil
Harvest when the top of the root is about 1/2 to 1 inch wide
Pull one test carrot to check size and color
Harvest when roots are firm and fully colored
Avoid waiting too long, or carrots may become woody or split
Harvest after a light frost if you want a sweeter flavor
Use the greens as an additional sign of maturity, but do not rely on them alone
