Preheat the oven to 325°F
Grease a muffin tin or silicone egg bite mold
Crack eggs into a bowl
Add milk or cream
Add salt and pepper
Whisk until smooth
Stir in shredded cheese
Add cooked bacon, ham, vegetables, or other fillings if desired
Pour the mixture into the prepared cups
Fill each cup about three-quarters full
Place the muffin tin in a larger baking dish
Add hot water to the larger dish for a water bath
Bake until the egg bites are set, about 20 to 25 minutes
Remove from the oven and let cool slightly
Take the egg bites out of the mold or tin
Serve warm or store in the refrigerator
