Crack eggs into a bowl
Add a splash of milk, cream, or water if desired
Whisk until fully combined and slightly frothy
Season with salt and pepper
Heat a nonstick pan over low to medium-low heat
Add butter and let it melt
Pour in the eggs
Let the eggs sit briefly before stirring
Gently push the eggs from the edges toward the center
Stir slowly and continuously in soft folds
Remove from heat while still slightly soft and glossy
Serve immediately
