Bring 4 cups of water or milk to a boil in a saucepan
Add 1 teaspoon salt
Slowly whisk in 1 cup stone-ground grits
Reduce heat to low
Stir frequently
Simmer until thick and tender, about 20 to 30 minutes
Add more water, milk, or broth if needed
Stir in butter
Season with black pepper
Add cheese if desired
Serve hot
