Wash and trim fresh pickling cucumbers
Pack cucumbers tightly into clean jars
Add fresh dill, garlic, and optional spices like peppercorns or mustard seeds
Combine water, vinegar, and salt to make the brine
Heat the brine until the salt dissolves
Pour the hot brine over the cucumbers, fully covering them
Remove air bubbles and leave a little headspace
Seal the jars with lids
Let the jars cool to room temperature
Refrigerate for at least 24 hours before eating
Wait several days for the best flavor
Store refrigerated and use within a few weeks
