Gather ripe peaches, sugar, lemon juice, and pectin
Wash the peaches thoroughly
Remove pits and chop the peaches
Cook the peaches with a small amount of water until soft
Mash or puree the cooked peaches
Strain the mixture through a jelly bag or fine sieve to extract juice
Measure the peach juice
Combine the peach juice, sugar, lemon juice, and pectin in a large pot
Bring the mixture to a full rolling boil
Boil for the time specified by the pectin package, stirring constantly
Test for gel set if needed
Remove from heat
Skim off any foam
Pour the hot jelly into sterilized jars
Leave proper headspace
Seal the jars with lids and rings
Process the jars in a boiling water bath if required
Let the jars cool completely
Check that the lids have sealed
Store in a cool, dark place
