Heat 2 tablespoons olive oil in a large pot over medium heat
Add 1 chopped onion, 2 diced carrots, and 2 chopped celery stalks
Cook for 5 to 7 minutes until softened
Add 3 minced garlic cloves and cook for 1 minute
Stir in 1 diced zucchini, 1 cup chopped green beans, and 1 diced potato
Add 1 can diced tomatoes, 6 cups vegetable broth, 1 teaspoon dried oregano, 1 teaspoon dried basil, salt, and black pepper
Bring to a boil, then reduce heat and simmer for 20 to 25 minutes until vegetables are tender
Add 1 can drained and rinsed cannellini beans and 1 cup small pasta
Cook for 8 to 10 minutes until pasta is tender
Stir in 2 cups chopped spinach or kale and cook until wilted
Taste and adjust seasoning
Serve hot with grated Parmesan, if desired
