Rinse 1 pound dried beans and remove any debris
Soak beans overnight in water, or use a quick-soak method if preferred
Drain and rinse the beans
Place beans in a large pot and cover with fresh water or broth
Add onion, garlic, salt, pepper, and a ham hock or bacon if desired
Bring to a boil
Reduce heat to low and simmer until beans are tender, about 1.5 to 3 hours
Stir occasionally and add more liquid if needed
Taste and adjust seasoning
Serve hot with cornbread or over rice
