2 pounds potatoes
3 hard-boiled eggs
1 cup mayonnaise
2 tablespoons mustard
1/2 cup chopped celery
1/4 cup chopped onion
2 tablespoons pickle relish
1 tablespoon vinegar
1 teaspoon salt
1/2 teaspoon black pepper
Boil the potatoes until tender
Drain and cool the potatoes
Peel and chop the potatoes
Chop the hard-boiled eggs
Mix mayonnaise, mustard, vinegar, salt, and pepper
Add potatoes, eggs, celery, onion, and relish
Stir gently until combined
Chill before serving
