Sort through the beans and remove any debris, stones, or damaged beans
Rinse the beans under cold water
Soak the beans in plenty of water for 8 to 12 hours, or overnight
Drain and rinse the soaked beans
Place the beans in a pot and cover with fresh water
Bring to a boil, then reduce to a simmer
Cook until tender, adding more water if needed
Season after the beans are tender
Drain any excess liquid if desired
