Thaw lobster tails completely if frozen
Preheat the broiler
Line a baking sheet with foil
Use kitchen shears to cut the top shell lengthwise down the center
Stop cutting at the tail fin
Gently loosen the meat from the shell
Lift the meat through the slit and rest it on top of the shell
Keep the base attached at the tail end
Remove the vein if present
Pat the meat dry
Brush with melted butter or oil
Season as desired
Place the tails on the prepared baking sheet
Broil until the meat is opaque and lightly browned
Serve immediately
