Thaw frozen scallops in the refrigerator
Remove the side muscle if present
Rinse quickly under cold water
Pat completely dry with paper towels
Season with salt and pepper
Heat a skillet over medium-high heat
Add a small amount of oil or butter
Place scallops in the pan without crowding
Sear for 1 to 2 minutes per side
Cook until opaque and lightly golden
Remove from heat immediately
Serve right away
