Clean the griddle surface with warm water and a scraper
Dry the griddle completely
Turn the heat to high and let the surface heat up
Apply a thin, even layer of cooking oil with a paper towel
Use an oil with a high smoke point such as flaxseed, canola, or vegetable oil
Let the oil smoke and burn off
Repeat the oiling and heating process several times
Allow the griddle to cool
Wipe on a final thin layer of oil after cooling
Reheat the griddle before cooking
Clean and lightly oil the surface after each use
