How to Start Potatoes from Eyes?

Choose healthy, firm potatoes with several well-developed eyes

Let the potatoes sit in a cool, bright place for a few days to encourage sprouting

Cut large potatoes into pieces so each piece has at least one or two eyes

Allow cut pieces to dry and form a callus for 1 to 2 days

Prepare loose, well-drained soil in a sunny location

Plant the potato pieces 3 to 4 inches deep with the eyes facing up

Space the pieces about 12 inches apart in rows 2 to 3 feet apart

Cover the planted pieces with soil

Water lightly after planting

Add more soil around the stems as the plants grow

Keep the soil evenly moist but not soggy

Harvest when the plants yellow and die back
