Check the expiration or “sell by” date
Perform a water test:
If an egg sinks and lies flat, it’s fresh
If it sinks but stands upright, it’s older and should be used soon
If it floats, discard it
Crack into a bowl and inspect:
Off smell (sour, sulfur-like, rotten) means discard
Unusual color (pink, green, or iridescent) means discard
Unusual texture (slimy or thick, stringy whites) means discard
Discard if the shell is cracked or leaking
Discard if the egg was left out at room temperature for more than 2 hours (or more than 1 hour if the room is above 90°F / 32°C)
Use refrigerated eggs within a few weeks for best quality, even if not expired
If you’re unsure, discard the egg
