Wash the mango thoroughly and dry it.
Cut a thin slice off one side lengthwise to flatten the mango.
Stand the mango on the flattened side.
Slice along the large pit on one side, from top to bottom, keeping the knife close to the pit.
Repeat on the other side to remove both mango cheeks.
Score the flesh of each cheek into cubes without cutting through the skin.
Push the mango skin outward to invert the cubes, then slice the cubes off.
Spoon the remaining flesh from the skin into a bowl.
Optional: Cut any leftover flesh around the pit into small pieces and add to the bowl.
