Remove the tomahawk steak from the refrigerator 45 to 60 minutes before cooking
Pat the steak dry with paper towels
Season generously with salt and black pepper
Preheat one side of the gas grill to high heat and the other side to medium or low heat
Clean and oil the grill grates
Place the steak on the cooler side of the grill
Close the lid and cook until the internal temperature reaches about 110°F to 115°F
Flip the steak once during indirect cooking
Move the steak to the hot side of the grill
Sear for 1 to 3 minutes per side until a deep crust forms
Sear the fat cap and edges briefly
Check the internal temperature with a meat thermometer
Remove the steak at 125°F for medium-rare or 130°F for medium
Rest the steak for 10 to 15 minutes
Slice against the grain and serve
