Use self-rising flour instead of all-purpose flour
Whisk together flour, milk, eggs, sugar, and salt
Separate the eggs
Beat the egg whites until stiff peaks form
Mix the yolks with the wet ingredients and dry ingredients
Fold the whipped egg whites into the batter
Let the batter rest for a few minutes
Heat a lightly greased skillet or griddle over medium heat
Pour batter onto the hot surface
Cook until bubbles form on the top and edges look set
Flip and cook until golden brown on the other side
Serve immediately
