Choose a beef chuck roast, rump roast, or brisket
Pat the roast dry
Season all sides with salt, pepper, garlic powder, and onion powder
Heat a skillet over medium-high heat
Sear the roast on all sides until browned
Place sliced onions, carrots, and potatoes in the crock pot
Put the seared roast on top of the vegetables
Add beef broth, water, or a mix of broth and Worcestershire sauce
Add herbs such as thyme, rosemary, or bay leaves
Cover the crock pot with the lid
Cook on low for 8 to 10 hours or on high for 4 to 6 hours
Check that the roast is fork-tender before serving
Remove the roast and let it rest for a few minutes
Slice or shred the roast
Serve with the cooked vegetables and juices from the crock pot
