Preheat the oven to 300°F to 325°F
Pat the country style pork ribs dry
Season with salt, black pepper, garlic powder, onion powder, and paprika
Optional: rub with a little brown sugar and chili powder
Heat oil in a skillet over medium-high heat
Sear the ribs on all sides until browned
Place the ribs in a baking dish or roasting pan
Add sliced onions, garlic, or a little broth if desired
Cover tightly with foil or a lid
Bake for 2 to 2.5 hours until tender
Uncover and brush with barbecue sauce if using
Increase oven temperature to 400°F or broil briefly to caramelize the sauce
Rest for 10 minutes before serving
Check that the ribs are fork-tender and fully cooked
