Pat the pork shoulder dry
Trim excess surface fat if desired
Season generously with salt and pepper
Add any dry rub or spices you like
Preheat the oven to 300°F
Place the pork shoulder in a roasting pan or Dutch oven
Add a small amount of liquid if desired
Cover tightly with a lid or foil
Roast until very tender, about 4 to 6 hours
Check for an internal temperature of 195°F to 205°F for shredding
Remove from the oven and rest for 20 to 30 minutes
Shred or slice the pork
Serve as desired
