Heat a heavy skillet over medium-high heat

Wait until the oil shimmers

Place the pork chops in the skillet without crowding

Sear for 3 to 5 minutes on the first side

Flip the pork chops

Sear for 3 to 5 minutes on the second side

Sear the edges briefly if needed

Reduce heat if the pan starts smoking too much

Cook until the internal temperature reaches 145°F

Remove the pork chops from the skillet
