Preheat the oven to 300°F
Remove the membrane from the back of the ribs
Pat the ribs dry with paper towels
Season both sides with salt, pepper, and your preferred dry rub
Place the ribs on a foil-lined baking sheet or roasting pan
Cover tightly with aluminum foil
Bake for 2.5 to 3.5 hours, until tender
Remove the foil
Brush with barbecue sauce if desired
Increase the oven to 425°F or broil briefly
Bake uncovered for 10 to 15 minutes, until the sauce is caramelized
Rest the ribs for 10 minutes before serving
Slice between the bones and serve
