Wash the mango
Place the mango on a cutting board
Stand the mango upright with the stem end facing up
Find the flat pit in the center
Slice down one side of the pit to remove a cheek
Slice down the other side of the pit to remove the second cheek
Score the flesh of each cheek in a grid pattern without cutting through the skin
Push the skin side up to pop the cubes outward
Cut the cubes off the skin
Trim any remaining flesh from around the pit
Peel the skin if needed and cut the remaining flesh into pieces
