Choose a heavy-bottom pot with a lid
Add 1–3 tablespoons cooking oil (enough to lightly coat the bottom)
Place 2–3 popcorn kernels in the pot to test heat
Heat oil over medium-high until the test kernels pop
Add popcorn kernels (about 1/3 cup per 3–4 quarts of pot volume)
Cover with a lid, leaving it slightly vented if needed
Shake the pot gently over the heat to prevent scorching
Listen for popping to slow down to about 1–2 seconds between pops
Turn off the heat when popping slows significantly
Remove from heat and keep covered for 30–60 seconds to finish popping
Season immediately with salt or desired toppings
Serve right away
