How To Make A Smash Burger?

Ingredients: ground beef (80/20), salt, black pepper, burger buns, American cheese (optional), neutral oil or butter

Preheat a skillet or griddle over high heat

Divide beef into portions (about 4–6 oz each)

Salt the beef lightly on both sides just before cooking (or salt after forming patties)

Form patties slightly wider than the buns

Place patties on the hot surface

Press patties flat with a spatula immediately after placing on the griddle

Cook without moving until a deep brown crust forms (about 2–3 minutes)

Flip once

Add cheese during the last 30–60 seconds if using

Toast buns on the cut side for 30–60 seconds

Assemble: bottom bun, patty (and cheese), optional toppings, top bun

Rest 30–60 seconds if desired, then serve immediately

Optional toppings: pickles, onions, ketchup, mustard, lettuce, special sauce
