Peel the potatoes
Cut the potatoes into evenly sized chunks
Place the potatoes in a pot
Cover the potatoes with cold water
Add salt to the water
Bring the water to a boil
Reduce to a simmer
Cook until the potatoes are fork-tender
Drain the potatoes well
Return the potatoes to the pot
Let the potatoes steam dry for a minute
Add butter
Add warm milk or cream
Mash until smooth or desired texture
Add salt and pepper to taste
Serve warm
