Cook rice and let it cool completely
Heat oil in a large pan or wok
Add chopped onions, garlic, and vegetables
Stir-fry until vegetables are tender
Push vegetables to one side of the pan
Add beaten eggs and scramble them
Add cooked rice to the pan
Break up any clumps of rice
Add soy sauce, salt, and pepper
Stir-fry everything together until well mixed
Add cooked meat, shrimp, or tofu if desired
Cook for a few more minutes until heated through
Garnish with chopped green onions if desired
