How to Candy Orange Rind?

Wash the oranges well

Peel off the rind in strips

Remove as much white pith as possible

Cut the rind into thin strips

Place the strips in a pot and cover with cold water

Bring to a boil

Drain and repeat boiling in fresh water 2 to 3 times

Make a sugar syrup with equal parts sugar and water

Add the drained rind to the syrup

Simmer until the rind becomes translucent

Remove the rind from the syrup

Let excess syrup drip off

Toss the strips in granulated sugar

Spread on a rack or parchment to dry

Store in an airtight container
