Use 80/20 ground beef for the best balance of flavor and juiciness
Keep the meat cold until shaping
Handle the meat gently and avoid overmixing
Form patties slightly larger than the buns
Make the patties about 3/4 inch thick
Press a small dimple in the center of each patty
Season both sides generously with salt and pepper just before grilling
Preheat the grill to medium-high heat
Clean and oil the grates
Place patties on the hot grill and avoid pressing them down
Grill for about 3 to 4 minutes on the first side
Flip once and grill for another 3 to 4 minutes for medium doneness
Add cheese during the last minute if desired
Use a meat thermometer for accuracy
Remove burgers at 160°F for ground beef
Let burgers rest for a few minutes before serving
Toast the buns on the grill briefly
