Keep the meat cold until shaping

Handle the meat gently and avoid overmixing

Form patties slightly larger than the buns

Make the patties about 3/4 inch thick

Season both sides generously with salt and pepper just before grilling

Preheat the grill to medium-high heat

Clean and oil the grates

Place patties on the hot grill and avoid pressing them down

Grill for about 3 to 4 minutes on the first side
