How to Fry Buffalo Wings?

Pat the wings dry

Season the wings lightly with salt and pepper

Heat oil in a deep fryer or heavy pot to 350°F to 375°F

Fry the wings in batches without overcrowding

Cook for 8 to 12 minutes, until golden brown and cooked through

Check that the internal temperature reaches 165°F

Remove the wings and drain on a wire rack or paper towels

Toss the wings in buffalo sauce

Serve immediately
