Pat the ahi tuna steaks dry with paper towels
Season lightly with salt and black pepper
Optional: add garlic powder, sesame seeds, or a light soy-based marinade
Heat a skillet or grill pan over high heat until very hot
Add a small amount of high-smoke-point oil
Sear the tuna steaks for 30 to 60 seconds per side for rare
Sear 1 to 2 minutes per side for medium-rare
Avoid overcooking to keep the center pink
Remove from heat and let rest for 1 to 2 minutes
Slice against the grain
Serve immediately with rice, salad, or dipping sauce
