Pat cod fillets dry with paper towels
Season with salt, pepper, and optional herbs or spices
Preheat oven to 400°F
Place fillets on a lightly oiled baking sheet or in a baking dish
Add a little olive oil or melted butter on top
Bake for 10 to 12 minutes, until the fish flakes easily with a fork
Optional: broil for 1 to 2 minutes at the end for a lightly browned top
Serve immediately with lemon wedges if desired
