Sort through the beans and remove debris or damaged beans
Rinse the beans under cold water
Soak the beans overnight in plenty of water if desired
Drain and rinse soaked beans before cooking
Add beans to the crock pot
Add fresh water or broth to cover the beans by 2 to 3 inches
Add salt, if using, near the end of cooking
Add optional seasonings such as onion, garlic, bay leaf, or herbs
Cover the crock pot with the lid
Cook on low for 6 to 8 hours or on high for 3 to 4 hours
Check the beans for tenderness near the end of cooking
Add more liquid if needed during cooking
Stir occasionally if possible
Drain excess liquid when the beans are done, if desired
Season to taste before serving
