Sort through the dry pinto beans and remove any debris or damaged beans
Rinse the beans under cold water
Soak the beans in plenty of water for 8 to 12 hours or overnight
Drain and rinse the soaked beans
Place the beans in a large pot and cover with fresh water by 2 to 3 inches
Bring the water to a boil
Reduce the heat to a gentle simmer
Skim off any foam that rises to the top
Add salt only after the beans are tender, if desired
Simmer the beans until tender, about 1 to 2 hours
Check the beans occasionally and add more water if needed
Test a bean for doneness by tasting it
Drain the beans when they are cooked to your liking
Use the cooked beans immediately or store them in their cooking liquid
