How To Cook Split Peas?

Rinse the split peas under cold water

Sort out any debris or damaged peas

Add split peas to a pot with water or broth

Use about 3 cups of liquid for every 1 cup of split peas

Bring to a boil

Reduce to a simmer

Skim off any foam if needed

Cook uncovered or partially covered

Stir occasionally

Simmer until tender, about 30 to 45 minutes for green split peas and 20 to 30 minutes for yellow split peas

Add salt near the end of cooking

Drain excess liquid if needed

Season and serve
